Dear  friends,

Once again we have a general lock down in Greece. Let me take the opportunity to share an another recipe with you and bring the scent of "eleonas hotel" to your home. So, take deep breaths, seek the help of roommates and put your hands in the dough to shape the olive pies. Good nutrition helps maintain our health.

Olive pies

What you’ll need for the dough :

1 waterglass of orange juice

1 waterglass of olive oil "eleonas"

4 cups flour for all uses

2 1/2 tablespoons Baking.Powder

For the filling:

 Paste from black olives

Oregano

Method:

Mix the dough ingredients well with a spoon or better with your hands until it pulls away from the sides of the bowl easily.

Mash black olives or Rovies green olives. Alternatively, use ready-made olive paste.

Take a portion like a large walnut and roll out a small round /oval shape between your palms. Put olive paste on the tip of the spoon and place the filling in the middle of the dough and cover it.

Place the pie on a tray covered with baking paper and press your fingers around the edges to seal. Bake at 180 degrees for 20 minutes or until nicely browned.

They can be kept outside the refrigerator for a few days.

 

Here in Rovies we have a long autumn period with sun. At the estate they have finished collecting the small Koroneiki variety olives and the oil of the year is already stored in the tanks. The olives of the Kalamon variety are now being picked.

One by one by hand.

I started seminars again about marketing, 5 senses tourism, sustainability, e-commerce and much more. I also continue the olive oil tasting to gain more experience.

 In one of the seminars they talked about the factors that contribute to healthy living in hotels. We are glad we can do  in all the criteria of the list. Totally ZEN.

  •  Air (fresh and clean)

  •  Water (drinkable even from the tub)

  • Lighting (the right one to set you in a  good mood)

  •  Sleep (ideal conditions for good sleep)

  • Temperature (with mild operations we achieve coolness in summer and warmth in other seasons)

  • Mattresses (comfortable, orthopedic, anti-allergic)

  •  Noise (one hears the tweeting of the birds and the rustle of the leaves )

  • Furniture (simple)

  • Body and mind balance (the colors, the scents, the layout of your room bring a sense of relaxation)

Our proposal, for a subsidy from the Leader program for the creation of a visitable olive press, was approved.

Another project in the works that must be completed the latested in three years.
