Dear Friends,

We have gently reached the end of the first month of the new year.I hope this will be a year with challenges we can face, problems that make us stronger rather than more exhausted. A year filled with people who love and support us, and with ideas we will dare to pursue and bring to life. Above all, a year of balance: between what we wish for and what is possible, between action and rest.

I waited until now to share the card I spent two months painting, not wanting to spoil the surprise.

Only recently did I learn that some of the handmade cards with our wishes — created with patience and care -have finally begun to reach you, a month and a half later.

I believe this will be the last year I send cards by post.

For 25 years, I have been designing cards, most of them inspired by the olive tree or olive branch.

While the weather remains grey and cold, I usually end up on the sofa, low on energy, taking a pause that feels necessary.

But the moment the sun appears, something shifts: I start putting things in order — objects, thoughts, ideas that have been patiently waiting their turn.

Luckily for me, in Rovies the sun almost always finds a way through the clouds, even in the heart of winter.

In the book, you will find articles on seasonality in vegetables, meat, and fish, as well as practical ideas for achieving zero waste in the kitchen.

It also includes a useful ratio guide to help measure ingredients more accurately and avoid unnecessary leftovers.

The book is only in Greek at the moment.

 

 

I am very proud to be part of the book “20 Chefs Recommend – Sustainable Diet and Zero Food Waste” by the Hellenic Society for the Protection of Nature, a project dedicated to mindful consumption and respect for food.

I believe my inclusion reflects our ongoing efforts toward zero waste and the daily search for ways to ensure that nothing goes to waste, more than my cooking skills.

They chose a sweet recipe… they know me well.

 

At the estate, tree pruning continues in an effort to heal the wounds left by the fire of 2021.

Large trees — some over a hundred years old — are reduced to a small trunk and begin life again from the very start.

Unfortunately, the countless wild boars make this process even more difficult, digging into the soil, damaging the roots, trampling young saplings, and puncturing irrigation pipes.

Still, Stefanos continues the care, and day by day, the change for the better becomes visible.
